a 2 day collaboration with our homies at Tonewood
We brewed this sour IPA with our friends at Tonewood over the course of 2 days, souring the wort overnight in the kettle with a lacto pitch. After about 18 hours the pH dropped to 3.5 and we brought it back up to a boil before sending it to the whirlpool where we added Lupilin Citra. We then dry hopped with Mosaic, Simcoe, and Montueka. This hop combo really has some beautiful synergy that is a flavor bonanza of lime, grapefruit, guava, and some mango with funky, tart, and earthy undertones.
